Our house-made Tiramisu. We have a beautiful dessert special this week, a Tiramisu meant for sharing. Andrew has been working on a Tiramisu for a while, and this is the culmination of a lot of R&D. The secret to making a truly spectacular Tiramisu lies in the cookies used to layer the delicious mascarpone cream. Everything in this dessert is from scratch. First, we make Italian Savoiardi, a ladyfinger-like cookie that is extra sturdy, guaranteeing the proper texture inside this layered dessert. Then the cookies are soaked in espresso before being layered with a luxurious mascarpone-based cream filling, and topped with powdered cocoa.
