Spelt is an ancient variety of wheat that people have cultivated since 5000 BCE. We mill local spelt in our stone mill to make this bread for maximum flavor and freshness. Spelt is a bit more delicate than whole wheat flour and gives the bread a lighter texture than regular wheat. The sunflower seeds give the bread a hint of sweetness and almost peanut butter flavor to this savory bread.
